So I was thinking to myself that I wanted to keep track of recipes I like that I have modified, and to put them into a book.
Here’s My First Entry:
Jessie’s Chilli Con Carne Spicy Style (based on an about.com recipe for crockpot chili)
warning: your lips may burn for a little while, but it’s worth it
Ingredients:
- 2 (15 1/2 oz.) cans red kidney beans, drained
- 2 large tomatoes chopped up
- 1/2 cup chopped celery- optional
- 1 cup chopped onion
- 1 (6 oz.) can tomato paste
- 1/2 cup chopped green pepper
- 2 chopped red bell peppers
- 2 tablespoons splenda
- 1 dash cinnamon
- 2 tablspoons garlic powder
- 1 teaspoon salt- or how you see fit
- 1 teaspoon dried, crushed leaf marjoram
- 1/8 teaspoon pepper- you can add more though
- 1 to 1 1/2 pounds lean ground beef
Preparation:
In skillet brown ground beef and drain. In crockery cooker combine all ingredients. Cover, cook on low heat for 8 to 10 hours. Serve with low fat sour cream or tofutti. Can also put a little melted cheese on top. Makes about 6 to 8 hearty servings.
